Biology
Seaweeds and other algae are eukaryotes and perform their photosynthesis using chloroplasts or similar organelles. Generational changes can be found in several seaweeds. There are both isomorphic (successive generations have the same shape, e.g. in sea lettuce) and heteromorphic (successive generations have different shapes) species. The shape and ecology of the macroscopic seaweeds usually differ from that of the single-celled algae species.
Form
The appearance of seaweed is in some cases reminiscent of that of land plants. There are species with a stem-like structure with a foot that attaches itself to a substrate. In addition, there are often leaf-like structures with spore-forming parts.
Ecology
Seaweeds depend on salt water, sufficient light and a sufficiently firm substrate to adhere to. Seaweed is therefore often found in the littoral area and near rocky coasts. At its deepest, seaweeds in the Netherlands live within a few meters; this is due to the fact that the water is not clear enough to allow sufficient sunlight through at greater depths. At its highest, seaweed grows just below the highest water level. Under favourable conditions, seaweed can grow up to 60 metres long and therefore grows at much greater depths. Kelp (a large brown seaweed) forms the kelp forests together with many other species.
Uses of seaweed
Food
Seaweed is also used as food, although it is much less well known in Europe than in countries such as Japan and Korea. It can be eaten as a vegetable, but it can also be used as decoration and flavoring. In Sushi, strips of red seaweed (Nori) are used to keep the various rice and fish ingredients together by wrapping a narrow strip around the snack. Japanese salts, a kind of rice crackers or rice salts, are often also covered with some seaweed to give them a spicy taste. In Indonesia, seaweed is processed into agar-agar, a vegetarian binder or a substrate for the cultivation of bacteria. This food is known for its high concentrations of calcium, potassium and iron.
Seaweed is rich in minerals such as iodine and calcium and trace elements. Depending on the species, it also contains vitamins such as vitamin C and E. Brown seaweed contains about 5-10%, red seaweed and green seaweed about 10-30% protein. Part of seaweed is not broken down by the body and can be seen as dietary fiber.
Some seaweeds contain a vitamin B12-like substance, but it is inactive as a vitamin. As a nutrient for vegans it doesn’t work. The vitamin B12-like substance from algae can even have a negative effect by blocking the absorption of real B12.
The North Sea Farm Foundation started a small-scale trial to grow seaweed in the North Sea in 2015. Seaweed is also being grown in the Oosterschelde near Neeltje Jans.

Another way to use seaweed is through the skin: in sauna treatments, (thalasso) hydrotherapies, with body wraps or in body care products.
